Elimination Diet, Day 60

Two months. It’s not over yet, but today will be my last day of day-by-day posts. Tomorrow I’ll start posting a series of recaps.

Two months. That’s how long it took me to intentionally cheat. Will and I took a motorcycle ride. When we got to our destination after over an hour, I was hot, tired, had a headache from my helmet, my butt hurt, and I was craving something cold and sweet and we had only brought carrots. Oh, and there is an amazing ice cream parlor in this town. I may have gotten some. I should have just waited until tomorrow, then I wouldn’t have to admit this to any readers out there. I could say I went 60 days without any bad foods, other than a sip of iced tea and the meat of a fried chicken. But I did it.

However, this will not be a regular occurrence. I am going to go back to the elimination diet rules. To my personal rules I’ll be posting about tomorrow. Back to where ice cream in a cone is a big no-no (unless they have been made by me and I know the ingredients are okay). I am going to stick to eating healthy and clean, no more cheating until next month (fair season).

Despite the ice cream, I’m feeling okay today. My skin is doing well. One elbow is a bit dry, but overall it’s good. My legs and elbows still have healing to do, but how far they have come in two months, even with two flares, is truly amazing.

Breakfast: Yogurt with peanut butter, banana, Cinnamon Raisin Bread with jam
Lunch: Bacon, eggs with cheese and spinach, fruit salad, toast with jam
Dinner: Mung Beans and Rice, chicken, green beans
Snacks: Carrots, maple nut ice cream in a cone, nuts, leftover pizza
