Last day of freedom. Tomorrow I start my first full time job. It’s like I’m a grown up or something (I don’t really count the summer I was a camp counselor. That was above and beyond full time). Luckily, the fridge and freezer are packed full of meals and produce and the blender is ready to whip up some quick smoothies for breakfasts (especially since I finally finished off the last of my quinoa and blueberry syrup this morning).
Yesterday I mentioned having a frozen banana. I highly recommend one on a hot day and they can be used for one (or more) ingredient ice cream, which I will discuss at a later date. Something important to keep in mind, though, is that the peel should be removed before the freezing.

Elbows and legs are looking better. I’ve noticed that my elbows look great in the morning, then worse by the evening. I wonder what causes that.
Breakfast: Quinoa and Blueberry Syrup, Banana
Lunch: Moroccan Quinoa Pilaf
Dinner: Aduki Bean and Mushroom Shepherd’s Pie, probiotic brine, fermented vegetables
Snacks: Crackers, nuts, apple
In the morning I put all the fruit for an Energizing Nut Berry Smoothie (Whole Life Nutrition Cookbook)in the freezer, since they need to be frozen. Then before bed I made up the smoothie and put it in the fridge for a quick breakfast.
