Probiotic Mint Salad Dressing

OLYMPUS DIGITAL CAMERAMost store bought salad dressings aren’t very healthy, or they have unpronounceable ingredients, or they have elimination diet-banned ingredients, or a combination of the above. Even most homemade recipes involve vinegar or dairy. Thankfully, Nourishing Meals offers a great dressing for those of us in Phase Two and beyond. They also mention that the brine from the fermented vegetables can be made into a probiotic salad dressing. So, to make my life easier, I combined these two concepts into this delicious dressing.

Probiotic Mint Salad Dressing
1/2 cup packed fresh spearmint leaves
1/2 cup freshly squeezed lemon juice
1/4 cup brine (or more, to taste)
4 to 5 garlic cloves, peeled
1 teaspoon whole black peppercorns
3/4 cup extra virgin olive oil

Combine all ingredients except the oil into a blender and blend until smooth. Add olive oil and blend slowly until just mixed. Store in the refrigerator. Bring to room temperature and shake before use.
